Manuel has been hard at work since he was young, working as a part of his family business back in his Italian homeland, working shirts during the evening after school. This dedication to the hospitality craft has stayed with him to this day, since moving to England 10 years ago and working in some of London’s finest venues along the way.
At iconic Tower Bridge venue Le Pont de la Tour, he mastered every aspect of the business, starting as a Commis Waiter and working his way up to Head Waiter, before going back and trying his hand as Junior Bartender and working up to Bar Manager. His commitment to challenging and improving himself did not go unnoticed, and he soon headed over to German Gymnasium to manage a bar that serves the finest drinks to the many people of Kings Cross.
At The Portrait Restaurant, he’ll be getting to grips with Chef Corrigan’s famous Irish Hospitality, crafting the finest cocktails and of course, mastering the perfect pour of plenty of the black stuff.
